Ghee is an excellent healthy fat, made by carefully removing certain milk proteins and sugars (casein and lactose) from butter. Clarified butter, or ghee, is pure butterfat–butter with the milk solids and water removed. Compared to butter, ghee is easier to digest, excellent for high heat cooking, and stable at room temperature.
