Ingredients:
500 grams of fish and prawns (cleaned and deveined)
1 tablespoon ginger paste
1 tablespoon garlic paste
2 tablespoons vegetable oil

2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 teaspoon black peppercorns
1 teaspoon fennel seeds
2-3 dry red chilies
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon dried mango powder (amchur)
1 teaspoon garam masala
Salt to taste
Instructions:
- In a dry skillet, roast the cumin seeds, coriander seeds, black peppercorns, fennel seeds, and dry red chilies for 1-2 minutes over medium heat until fragrant.
- Remove the skillet from the heat and let the spices cool down to room temperature.
- Once cooled, transfer the spices to a spice grinder or mortar and pestle and grind into a fine powder.
- In a mixing bowl, combine the ground spices with turmeric powder, red chili powder, dried mango powder, garam masala, and salt to taste.
- In a large pan, heat the vegetable oil over medium heat.
- Add ginger paste and garlic paste to the pan and sauté for 1-2 minutes until fragrant.
- Add the prepared masala to the pan and sauté for another 2-3 minutes until fragrant.
- Add the fish and prawns to the pan and coat them well with the masala.
- Cover the pan and let the seafood cook in the masala for 5-7 minutes until fully cooked.
- Once the seafood is cooked, remove the pan from heat and garnish with fresh coriander leaves.
- Serve hot with rice or naan.
