Ingredients:
1 tin of Mitchell’s Sarson ka Saang (800g)
2-3 tablespoons of ghee or oil
1 medium-sized onion, finely chopped
1-2 green chilies, finely chopped (optional, for extra heat)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon red chili powder
Salt to taste (if needed)
2-3 tablespoons of maize flour (makki ka atta)
Fresh coriander leaves for garnishing
Butter (optional, for serving)
Instructions:
Preparation:
Open the tin of Mitchell’s Sarson ka Saang and keep it aside.
If you like your dish with an extra spicy kick, finely chop 1-2 green chilies.
Cooking:
Heat 2-3 tablespoons of ghee or oil in a large pan or wok over medium heat.
Add 1 teaspoon of cumin seeds and let them splutter.
Add the finely chopped onion and sauté until it turns golden brown.
Add 1 tablespoon of ginger-garlic paste and sauté for another minute until the raw smell disappears.
Adding Spices:
Add the finely chopped green chilies (if using), 1 teaspoon of coriander powder, and 1 teaspoon of red chili powder.
Stir well and cook for a minute to let the spices blend.
Adding Sarson ka Saang:
Add the contents of the Mitchell’s Sarson ka Saang tin to the pan.
Mix well to combine with the onion and spice mixture.
Cook on medium heat for about 5-7 minutes, stirring occasionally.
Thickening the Saag:
In a small bowl, mix 2-3 tablespoons of maize flour (makki ka atta) with a little water to form a smooth paste.
Add this maize flour paste to the saag and mix well. This will help thicken the saag and enhance its texture.
Cook for an additional 5 minutes, stirring occasionally, until the saag reaches the desired consistency.
Adjusting Seasoning:
Taste the saag and add salt if needed. Remember, Mitchell’s Sarson ka Saang might already have some salt added.
Cook for another 2-3 minutes to let the flavors meld together.
Serving:
Once done, transfer the saag to a serving dish.
Garnish with fresh coriander leaves and a dollop of butter, if desired.
Serve hot with makki di roti (cornmeal flatbread), naan, or rice.
